1 small tomato
2 bitesize pieces of red onion
(marinade)
40g LF yoghurt
juice & zest of 1 lemon
half tsp of oregano
1 clove of garlic, finely chopped (or use powder)
salt & pepper
Method:
Cut the chicken into bitsize pieces and place in a bowl. Put marinade ingredients over the chicken and stir well. Leave to marinate for at least 1 hour. Thread a long skewer with the chicken and vegetables and grill for about 15 minutes, turning frequently.
Serve with vegetable rice or a greek salad and pitta
Points per skewer: 2.5
Serves 1 but easily adjusted for more.
