Recipe 6: Spicy Meat Samosa


Ingredients:

Spray oil
1/2 onion finely chopped
1 clove of garlic chopped
2 WW sausages (remove skin and roughly chop)
left over veg (chopped into small pieces) - today I used cauliflower, green beans, peas & sweetcorn
tsp tomato puree
1/2 red chilli chopped
tsp cumin seeds
tsp garam masala
salt & pepper
2 sheets of filo pastry
a little tiny bit of skimmed milk for 'sticking'

1. Make the mixture by frying all the ingredients in a shallow pan on a low heat for about 15-20 mins until all the veg is soft. Break the sausage meat down as it cooks. Add a little water (about 1 tbsp) early on to help the veg cook.
2. To make the parcels: lay out 1 sheet of filo pastry and cut it in half along its longest edge. Place both halves on top of each other. Starting at one end, fold filo over to make a triangle. Keep folding it over in triangles until you have one fold left over. Open up the triangle to make a pocket and add the mixture, pushing it to the edges as much as possible. Brush a little milk onto the top of the triangle and fold over the last flap.
3. Place on a sprayed baking sheet and cook in a medium-hot oven for about 30 mins (I didn't cook them long enough so they look quite pale in my picture). I sprayed them with a little oil before cooking.

Serves 1 as a main or 2 as a generous starter.

Points: 6.5 for two as made above (could reduce by eating one or by ommitting the sausage meat and using only veg. Also I used peas and sweetcorn at 0.5 and these could be swapped for other 0 point veg).

Serve with salad or veggie rice
